It’s the holiday season! I know November has just begun, but between Halloween and Christmas, we are right in the thick of it! Already my counters are full of delicious and decadent treats dropped off by friends and neighbors. Add to that the two HUGE bags of candy that the girls snagged trick-or-treating, and we are in the perfect storm of temptation and indulgence.
But you know what? I don’t have to resist anything! The truth is that I’m happy to leave the candy to the kids, because I’ve got a treat of my own. It’s this delicious pumpkin pie smoothie with toasted walnuts!

OK, I’m going to be 100% upfront and honest with you here: this smoothie doesn’t taste exactly like pumpkin pie. I think the fact that there isn’t any butter or refined sugar in it has something to do with that, not to mention the fact that traditional pumpkin pie filling is actually made of butternut and other winter squashes! But it is super yummy and pumpkiny and pie-reminiscent all the same, with bursts of those seasonal spices we all love, like cinnamon and nutmeg and cloves.
The inspiration for this smoothie came from having too many pumpkins!
Our pumpkin plants really over-delivered for us this year. From two tiny seedlings we ended up harvesting a dozen HUGE beach ball-sized pumpkins. We gave two away, and carved three of them for Halloween. That still left us with seven gourds of very unusual size, which had to be processed before they went bad.

Enter the pumpkin puree. The gallons of pumpkin puree!
I know that there is going to be lots of heavy pumpkin breads, cookies, muffins, pastas and soups in my future, but for now I needed something much lighter to see me through the season. And so the pumpkin pie smoothie was born! We just happened to have a harvest of walnuts to use at the same time, and I love the nutty, rustic flavor they add. It really is like having autumn in a glass!
