This creamy curried vegetable soup is quick, easy and perfect for taking a break from all the decadent holiday food you’ve been eating lately! Thanks to turmeric, bone broth and healthy vegetables frozen fresh from the garden, this delicious detox soup is full of nutrients, great for weight loss and is ready in just 30 minutes!
The holidays can be rough on a digestive system. All that rich and decadent food; the pies, the candy, the drinks! December hasn’t even begun yet and I already feel like a bowl full of jelly! A belly full of jelly, anyway.
Thank goodness for this hearty, healthy and downright delicious creamy curried vegetable soup!
If you had told me a few years ago that I would be craving curried vegetable soup instead of my usual rich holiday fare, I would have laughed at you. My heart was solidly in the bacon-stuffing and fudge camp. And not only that, but I didn’t think I liked curried anything. I must be getting older and wiser, because here I am. Not laughing, but drooling at the thought of having this for dinner with some warm baguette to dip in it. Yum!
And let’s be honest: not only is this soup delicious, it’s also the perfect food to help nourish and get myself back on track after indulging in too much of everything during the holidays.
Reasons to Love this Creamy Curried Vegetable Soup
It’s super healthy. This soup is low fat, low carb and incredibly high in protein, antioxidants, vitamins and trace minerals. Some of the ingredients are also shown to boost immunity, lower inflammation, aid digestion and lower cholesterol. And just check out all the vegetables in there! Plus, the swirl of creaminess in it makes this easy, everyday dinner soup feel like a luxurious indulgence (but it’s not)!
It plays well with others. Put it on rice for a complete meal. Add in some garbanzo beans for a chunkier texture. Spoon it over rustic crusty bread. Throw in the mystery vegetables from your crisper drawer. It’s infinitely and easily customizable!
It freezes well for later. This recipe yields about 6-8 servings, so there is plenty to freeze for another day! The flavors will fully develop and meld as it sits and really, what’s better than leftovers that you just have to heat up on the stove?
Creamy Curried Vegetable Soup
Thanks to turmeric, ginger and an assortment of healthy vegetables frozen fresh from the garden, this delicious detox soup is full of nutrients, great for weight loss and is ready in 30 minutes! This soup is also perfect for freezing, to have on hand when you really don’t feel like cooking. Enjoy!
Prep time: 10 minutes | Cook time: 20 minutes | Yield: 6-8 servings
- 2 tbsp extra virgin olive oil
- 3 cloves garlic, minced
- 1 onion, diced
- 3 carrots, peeled and diced
- 1 small butternut squash, cubed
- 1 can diced tomatoes
- 2 celery stalks, diced
- 2 sweet potatoes, diced
- 1 cup zucchini, grated or diced
- 2 cups chicken bone broth
- 1 tsp turmeric
- 1/2 tsp ground ginger
- 1/2 tsp cinnamon
- 1 tsp ground curry powder
- 1/3 cup nutritional yeast
- 1 tsp salt
- 1 can organic coconut milk
- 1/8 tsp smoked chipotle pepper
- Heat the olive oil In a large dutch oven on medium heat
- Add the the onion and saute until soft, about 5 minutes
- Add the garlic, and cook just until you can smell it, about 1 minute
- Stir in the other vegetables and add in spices, cook about 5 minutes
- Pour in the bone broth and the coconut milk and bring to a boil
- Turn heat to low, cover and simmer for 20 minutes
- Remove from heat and add in the nutritional yeast
- Blend the soup until it’s smooth and creamy (I use this immersion blender)
Notes: To make this meal vegetarian, simply replace the bone broth with vegetable stock. However, I prefer to add bone broth as a base because of the healing, nourishing, and anti-inflammation benefits it has. If I don’t have any of my own handy, Kettle + Fire is the commercial brand I use and trust.
